Luwak/Civet
Luwak is a species of civet cat endemic to South East Asia. Also known as the AsianPalm Cat, is a rare cat-like mammal natural inhabitant of the mountain rainforest in South East Asia. The civet’s eat only coffee berries and other wild fruit in the jungle.Coffee cherries are eaten by a civet for their fruit pulp.
After spending about a day and half in the civet’s digestive tract the beans then defecated in clumps, having kept their shape and still covered with some fleshy berry’s inner layers. They are gathered, thoroughly washed, sun dried and given only a light roast so as to keep the many intertwined flavors and lack of bitterness yielded inside the civet.
